Ingredients For Chicken Marinnade: • 1kg chicken (cut into pieces) • 1 cup yogurtt • 2 tablespoon ginger-garlic paste • 1 tsp red chili powder • ½ tsp turmeric powder • 1 tsp hot spices • salt to taste For Rice: • 3 cup basmati rice • 4-5 cups water • 2-3 cloves • 2-3 green cardamoms • 1 cinnamon stick • salt to taste For Biryani Layers: • 2 medium onions, thinly sliced and fried until golden • 2 tomatoes chopped • ¼ cup cooking oil • fresh coriander and mint leaves Instructions STEP 1: Marinate the Chicken In a large bowl, mix: • 1 kg chicken (skinless pieces) • 1cup yogurt • 2 tbsp ginger-garlic paste • 1 tsp red chili powder • ½ tsp turmeric powder • 1 tsp hot spices • salt to taste cover and let it marinate for at least 30 minutes, makes the chicken juicy and flavorful. STEP 2: Prepare the Rice wash and soak 3 cups basmati rice for 20 minutes.Boil water with whole spices cloves, green cardamom, cinnamon stick and salt. Add rice and cook until 70% done. Drain and set aside. STEP 3: Cook the Chicken Masala Heat oil in a deep pan and fry sliced onions until golden brown. Add chopped tomatoes and cook until soft, add marinated chicken and cook on medium heat until chicken is tender and oil separates. STEP 4: Layer the Biryani In a heavy-bottom pot: • Add chicken masala at the bottom • Spread rice on top • Sprinkle fried onions, fresh mint, coriander, and a few drops of food color (optional)
